Something Good to Eat

Smothered Pork Chops for 5
10 thin sliced chops or 5 medium to thick cut chops, I prefer boneless 
seasoned salt
pepper
garlic powder
2 cups beef or chicken broth
1 medium onion sliced thin
2-4 cloves garlic minced
1 cup flour, plus 4TBLS
4TBLS Butter or oil
Oil for frying I use a deep fryer, but a big heavy skillet can be used
Season chops generously with seasoned salt, pepper, and garlic powder. Dredge in 1 cup of flour. Fry the chops, once golden brown on each side set on paper towel to drain. If using the thicker chop internal temp of 155 is good.
In skillet melt butter, saute garlic add onions and allow to sweat over low heat about ten minutes or until onions are soft. Sprinkle with the flour slowly add broth. If gravy is too thick add more broth until desired consistency. Adjust seasoning for the gravy. 
Add pork chops and bring chops back to temperature. This can be served over mashed potatoes or rice. Pair with your fave veggie and some hot bread and you have yourself a great meal.

Sheridan's Cinnamon Rolls
1c. warm water
1c. lukewarm milk
1/2 c. sugar
2 tsp salt
2 eggs
1/2c unsalted butter or shortnening
2 pkgs rapid rise dry yeast (active dry yeast is acceptable)
7 to 7 1/2 cups all purpose flour

For Filling:
1/2 c. brown sugar
2 tsp cinnamon
Butter

Cream Cheese Icing (optional)
1 stick unsalted butter
8 oz. cream cheese softened
1 lb powdered sugar (confectioner's sugar)

Dissolve yeast in warm water. Combine eggs, sugar, salt and butter. Add yeast. Stir. Add two cups of flour, stir. Add flour one cup at a time until dough leaves the side of the bowl. Turn on a well floured board and knead in enough flour to keep dough from sticking to fingers. Knead about 10 minutes or until smooth and elasticky. Round and place in a buttered bowl. Turn buttered side up and cover with a towel. Set aside in a warm place until double, about and hour and a half. Punch down and allow to rise about thirty minutes.
Turn on floured board. Divide dough in half. Roll each half into a rectangle about 15"x10". Spread with softened butter sprinkle with cinnamon-sugar mixture. Roll into jelly roll. Cut in one inch sections. Place in a rectangle baking pan.
Cover with towel and allow to rise until double. Bake in 350 degree oven for 30 to 35 minutes. Serve warm with or without icing.

In mixing bowl cream butter and cream cheese. Add sugar and enough milk to give a spreading consistency if needed.
